What is zulu time; departure, arrival or GMT?

ZULU time is GMT time. It is the time refering to Greenwich Meridian Time time.
"Greenwich, England has been the home of Greenwich Mean Time (GMT) since 1884. GMT is sometimes called Greenwich Meridian Time because it is measured from the Greenwich Meridian Line at the Royal Observatory in Greenwich. " (Equals to ZULU)

My understanding is that Zulu time is basically the same as GMT. Zulu refers to the GMT time zone. You then "step" alphabetically from time zone to time zone as you get further away from GMT. For example, in the U.S. the time zones are Romeo (Eastern), Sierra (Central), Tango (Mountain), Uniform (Pacific), Victor (Alaska), Whiskey (Hawaii).

But I think the use Zuli more than GMT in aviation terms.

ZULU time is a military explanation of GMT that became common in aviation too. As GMT time steps +/- 1 hour during the daylight saving time, but ZULU not. So in the summer there is a 1 hour difference between GMT and ZULU, but I do not know which direction.

In the summer we are 1 hour in front of Zulu time.
eg. 0900z = 1000BST
